French toast without eggs isn’t the same. Really, it isn’t. But as vegans, we just gotta be creative and play with different flavours! In this case: apple and cinnamon! The best combination ever, right??
And, trust me on this, making this vegan version is just as easy as a regular French toast. We’re making it the exact same way as we would with the regular one. Mix the ingredients, dip our bread in it, soak, fry, done.
I love making this apple cinnamon French toast on my camping trips. Not only is it one of the best breakfasts you can have after a night under the stars, but also a great way to use up your 3-days-old bread that’s starting to dry out on the edges.
Ingredients
- bread
- apple sauce, or apples (for blender version)
- vegan milk
- cinnamon
- dates (optional, for blender version)
(see recipe card for quantities)
Bread: It doesn’t really matter what kind you’re using. You can use sandwich bread, artisan bread, sourdough, etc., you get the idea. As long as it has the ability to soak up liquids. So maybe, don’t use something like pumpernickel.
It also doesn’t matter if your bread is a few days old. After all, that’s how this recipe was “invented”—to save the stale bread from being tossed. Which is why the French call it pain perdu (lost bread) or the Germans Arme Ritter (poor knights, also a name used in the English language).

How to make this vegan apple cinnamon French toast
As mentioned earlier, there are two ways to make this recipe. Let’s start with the simple one first (well, the blender method is also very simple, mind)!
The easy way:
Step one: slice bread of your choice (see notes above, under ingredients), if not already sliced.
Step two: mix one part apple sauce with two parts vegan milk of your choice, like ½ cup apple sauce with 1 cup milk. How much you’ll need depends a little on the size and consistency of your bread (i.e. how much liquid it can absorb).
I wouldn’t really worry all too much about quantities here. Start with a small amount and go from there. You can always mix up more, it’s not that hard, really. After a while, you’ll just know how much you need.
Step three: pour some of the apple milk mixture into a flat bowl or a plate with a higher edge (ideally, the slice of bread sits flat in the centre of either the bowl or plate). Generously sprinkle the surface of the mixture with cinnamon.
Soak the bread (on each side) for a minute or so. If you don’t have that kind of bowl or plate, simply dip the slice into the mixture a few times until soaked.
Step four: while the bread is soaking, heat oil, or vegan butter, in a small pan over medium heat. Fry the French toast for several minutes on each side until golden brown.
Step five: serve hot with vegan butter, maple syrup, fresh fruit, cinnamon sugar or whatever you like! Enjoy!
The high-speed blender method:

For this version, we only change step two. First, instead of apple sauce, we’re using whole apples. Second, instead of mixing the ingredients together, we blend them.
So, all you really need to do is chuck them in your high-speed blender. I use my nutribullet (affiliate link, save 20% off your first purchase, using promo code: WELCOME20) for this one and blend until smooth. That’s it. Then you continue with step three.
The great thing about this method is that the dates make the mixture much creamier and because it’s blended it’s also a lot smoother.
Substitutions
gluten-free: simply use gluten-free bread.
Vegan milk: you could also just use water instead, however, it won’t be as nice tasting, obviously. If you’re using the blender, you may wanna try just using water and adding a tablespoon of oats for more flavour.
Apples: substitute apples with pears or bananas! Or any kind of fruit sauce!
