    Snickers Dates

    These Snickers Dates are the easiest, healthiest and most delicious Snickers you’ll ever make! So simple, so quick to make, you’re gonna love this (vegan!) snack!!

    As soon as I saw these Snickers stuffed dates on Social Media I had to make them too! They are my new absolute favourite snack! If not to say, I’m obsessed with them!

    I’m giving you an option that I like to call it the “lazy vegan” version! Plus, one option for making your own (raw) chocolate from scratch that is free of any nasties and maple-sweetened!

    Ingredients

    • Medjool dates
    • peanut butter
    • (vegan) chocolate
    • peanuts (optional)
    • salt (optional)

    (quantities in recipe below)

    Dates: I prefer Medjool dates because they’re nice and big and easier to stuff.

    Peanut Butter: Choose a natural peanut butter that only contains peanuts and sea salt. If yours is only made with peanuts, you may want to add some salt to these dates snickers.

    Chocolate: You can use a chocolate bar or chocolate chips. And whether you wanna use milk or dark chocolate, that’s totally up to you.

    Or you make yours from scratch. I used half of my homemade raw chocolate recipe that is made with cacao butter (or coconut oil, alternatively)!

    Instructions

    Step One. Remove the pits from the Medjool dates and place them on a plate.

    Step Two. Using a teaspoon, scoop out some peanut butter and stuff the dates with it. I usually just spread the peanut butter into one half and reckon it’s enough. Sprinkle with a bit of salt (optional).

    If you like and aren’t using crunchy peanut butter, you can add some chopped peanuts.

    Step Two and A Half. This tiny step is optional but I find it very helpful for later. I put the peanut butter stuffed dates into the fridge for a few hours, most of the time overnight. When they’re cold, the chocolate will stick to them more easily (just a little trick).

    Step Three. Melt the chocolate. I do this in a ceramic bowl which I place over a saucepan with boiling water. Steaming is just a gentler method.

    Step Four. Make sure the Snickers stuffed dates are closed as much as possible so the chocolate coats the date more evenly. Using a fork, dip each date into the melted chocolate.

    Sprinkle with chopped peanuts and/or some salt.

    Step Five. Put your Snickers Dates into the fridge to set (about 30 minutes to 1 hour).

    Lazy Vegan Snickers Dates

    If you want to short-cut the chocolate melting process, or if you wanna have this yummy snack RIGHT NOW, this is the way to do it:

    Step One. Proceed just like explained above (pit the dates and stuff them with peanut butter). Add (vegan) chocolate chips or a piece of chocolate to each date (just as you can see in the picture below).

    Step Two. That’s it. ENJOY!

    Raw Chocolate Snickers Dates

    This is what I always do because I mostly eat my homemade chocolate. It’s easy, and you’ll only need 3 ingredients! Plus, you have to melt the chocolate anyways, so it’s not really an extra step.

    Step One. Melt ½ cup/60g cacao butter OR make it easier/cheaper by using ½ cup/125ml coconut oil. When melted, add 1 ½ tablespoon of maple syrup. Then, add ½ cup/30g cacao powder. Let the chocolate cool down for a bit while you stuff the dates.

    Step Two. Just proceed as mentioned above: pit the dates and add peanut butter. Dip them into your homemade chocolate. Sprinkle peanuts and/or salt on top.

    Note: I find the chocolate coats better when the dates have been in the fridge the night before (see step 2 ½ in the original recipe).

    Substitutions

    Peanut Butter: This recipe works with any nut or seed butter. I like them with almond spread as well! Or even tahini!

    Chocolate: Instead of store-bought chocolate, you can easily make your own with just coconut oil, cacao powder and maple syrup! (see raw chocolate recipe above).

    Storage

    I keep my Snickers Dates in the fridge because I make them with my homemade chocolate (it melts faster than store-bought chocolate) and I live in hot Northern Australia… You may keep yours in the pantry.

    Store them in a container for several days—most likely even several weeks! Dates, peanut butter and chocolate have a fairly long shelf life. You can also freeze them, if you like, for up to 6 months.

    • 20 Medjool dates
    • 100g / 3.5 oz chocolate (chips) vegan, if needed
    • natural peanut butter
    • chopped peanuts & salt optional
