Remove the pits from the Medjool dates and place them on a plate.
Using a teaspoon, scoop out some peanut butter and stuff the dates with it. Sprinkle with a bit of salt (optional). If you like and aren’t using crunchy peanut butter, you can add some chopped peanuts.
Melt the chocolate. I do this in a ceramic bowl which I place over a saucepan with boiling water.
Make sure the dates are closed as much as possible so the chocolate coats the date more evenly. Using a fork, dip each date into the melted chocolate. Sprinkle with chopped peanuts and/or some salt.
Put your Snickers Dates into the fridge to set (about 30 minutes to 1 hour).
Notes
Peanut Butter: This recipe works with any nut or seed butter. I like them with almond spread as well!
Storage: Store them in a container for several days—most likely even several weeks! Ideally in the fridge, but in the pantry would be fine too.
